Reminiscent of the bohemian culture of Paddington, Pablo’s Vice espresso bar serves up something different in a laid-back way. Reggae beats ooze from the open kitchen, and the friendly, denim-clad waiters – Steve and Isaac – serve up sandwiches and juice with a casual charm. It’s clearly a place for regulars and they are the type of guys who remember how many sugars you take in your coffee. With a little Nudie juice under the belt, providing enough fruity goodness to last a lifetime, the bacon and egg “Monster” arrives and turns out to be as solid a meal as the name suggests. The spicy Moroccan chicken deluxe with avocado, roast capsicum, spinach and tzatziki is extremely satisfying, towering high between two pieces of inch thick crusty bread. A delight for the tastebuds but not recommended for first dates! The niche location on leafy Goulburn Street has been serving customers for seven years. In the past few months new management has taken over and given the site a modern injection while promising to keep the cool, casual vibe alive. Pablo’s offers a simple menu with healthy, fresh products like bagels and flavoured breads, right now adding some mezze plates to a new menu, as well as every kind of tea and Nu coffee served as you like it.The experience is a treat and everybody from Sydney locals to Melbourne hip-hop artists 1200 Techniques (pictured) are soaking up the casual, homely experience of dining at Pablo’s Vice. – Christine O’Maley.
